OK, which do you want first? The really awesome, super yummy, super calorific and not-so-healthy enchiladas recipe? Or… the really healthy, super yummy, lower-fat, whole grain enchilada recipe?

I need to be inspired. It is time to start cooking again (I can’t believe that you have time to cook) and I am, well, uninspired.
Someday will you come to my house and paint a bird in a tree on my little Gracie’s wall in her closet/room?
You can stay in our “hotel” and have a long bath with no interruptions. I’ll even make your enchaladas.

Which one is “crack in a tortilla?” Tell me it is the healthy one. (I give you permission to lie to me.)
I imagine the crack in the tortilla is the super caloric one…want the recipe, okay both, anyway!
